F. Scott Fitzgerald once said: “Too much of anything is bad, but too much Champagne is just right”—and we wholeheartedly agree! Incidentally, our newest Celebrate with Bubbles Box is just right for celebrating your springtime special occasions. Subscribe now through May 31st to get yours—it’ll ship the week of June 6th, and the following three cocktails will be yours to enjoy.
In the Kumquat Whynot?, kumquats add a sweet and bitter mouthfeel while raspberries bring a touch of texture, leaving the nectarines to smooth it all out, and the addition of a sugar cube changes each sip into a delicious treat. This summer sipper is light and refreshing without being too heavy or sweet.
It was created by Colleen Healy of Champagne for Pops. She uses her knowledge of fresh, seasonal ingredients from her culinary background to create unique, well-balanced specialty Champagne cocktails. Colleen has been deemed the “Sparkling Queen of Chicago” and her Champagne cocktails have been called some of the best in the city.
The Pink Peppercorn Potion is like a (very classy) party in your mouth! We’ve taken the classic Champagne cocktail—which consists of bubbly, bitters, and sugar—and we’ve riffed upon it, as we love to do. Peychaud’s bitters are tangier and have more floral tones than the spicy Angostura. Lemon juice adds some zing. And for the sugar, we’ll be using a syrup made with summery strawberries, fragrant peach white jasmine tea, and pink peppercorns.
This cocktail was created by Zach Patterson, an award-winning bartender whose signature drinks appear on menus worldwide. He co-owns and operates Melrose Umbrella Co. on Los Angeles’s famed Melrose Ave, which was named LA Weekly’s “Best Modern Cocktail Bar” in 2014 and featured by Imbibe Magazine in their Top 50 Beautiful Bar Designs list in 2016.
The Time After Thyme combines the herbaceous fusion of cucumber, celery, and thyme with the fresh citrus of grapefruit. This cocktail will have you kicking back with your heels up while enjoying each refreshing sip.

She won first place in the 2014 National Restaurant Association’s “Star of the Bar” and 2013 Louis Royer “Show Me the Proof” competitions, was named one of Food & Wine‘s Top 10 Rising Star Mixologists,Wine Enthusiast‘s “40 under 40” 2015 honorees, and was one of four inductees into the “Dames Hall of Fame” in 2015.
