A round of cheers gives winter the cold shoulder with a frosty farewell. The amazing versatility of bourbon can weather any occasion, with a profile that beautifully welcomes flavors ranging from the softly sweet to the bitter and savory. This whiskey story of simple Southern roots, blossoming for centuries into a worldwide phenomenon, is certainly one for the ages!

Greg Mayer’s assembling an elite team of ingredients for some all-important assignment: to defeat the late-winter blues in a single icy sip. Operation Dreaming of Spring is soon to commence, following a trip through fields of trees and gardens to complement bourbon’s recognizable kick with only the best and brightest. Super lemon juice, creole bitters, and club soda are ready to roll, and—standing central among them—a juicy herbed orange syrup pepped up with pinches of rosemary, thyme, and green peppercorns. The creeping cold’s days are indeed numbered, faced with this crisp figment of Greg’s fancy that’s soon to be a revitalizing reality!

Greg began his career in the hospitality industry working in kitchens as a line cook and transitioned to roles behind the bars of many hot spots nationwide. Over the past few years, Greg represented the iconic Jack Daniel’s Tennessee Whiskey in NYC. Now he’s back in creation mode, working on cocktails for the Shaker & Spoon community! 

As the progenitor of celebrated tropical-themed establishments serving potent rum elixirs, Donn Beach’s legend will always remain relevant when it comes to the state of drinking. But for all his fearless ingenuity, even he couldn’t fathom what Sother Teague has in store for one of his favorite go-to flavor combinations. In Donn’s Dream, the synergy of citrus and spice is not difficult to spot; both in harmony when the bold and well-seasoned syrup of red bell pepper, grapefruit, and cinnamon is combined with grapefruit soda and super lemon juice, then finished with a cinnamon-sugared rim. Two tippling mega-talents converge in this cocktail, and the meeting point is the Bluegrass State, where bourbon steps in as starring spirit to establish the next big fantasy destination: Ken-tiki!

Sother is the beverage director at New York’s Amor y Amargo and host of The Speakeasy on Heritage Radio Network. In 2018, he was honored with Wine Enthusiast’s Mixologist of the Year Award, and he has authored two books, I’m Just Here for the Drinks and Let’s Get Blitzen, and created Driftwood Bitters and Garden Party Bitters. Red-dy or not, something’s coming from celebrated bartender Leah Moss that’ll change how we view the stiff and savor-worthy nightcap. The sought-after sturdiness of bourbon remains, with the spirit starring in the role it was born to play.
